While I am an opera singer first, I also became a mom in 2014.  I love my little girl to pieces, but put on a lot of extra weight during pregnancy.  I've always been relatively in shape, but after giving birth, losing the baby weight was a lot more difficult than any other weight I've managed in the past.  I tried to diet, exercise and make better choices on my own, but it wasn't working at the pace that I wanted, and I wasn't seeing results.  I finally decided to join an online group and learn how to better make the changes I wanted to see.

Meal of the day:

Broccoli-Cheese Soup

Ingredients: 
3 Tbsp brown rice, cooked

1 slice low-fat, low-sodium cheese

6 fluid ounces milk, fat-free

1 tsp. extra virgin olive oil

1/8 tsp. chili powder

1/2 cup broccoli, chopped, frozen

 

Directions: Cook rice according to package directions, or use about 1/2 of leftover, cooked rice.  Break cheese into pieces.  Heat cheese, milk and olive oil in a small sauce pan over low heat, stirring occasionally until cheese is melted.  Stir in chili powder, cooked rice and proccoli; cook until hot.  Enjoy!
